SIGNATURE CHICKEN SALAD

INGREDIENTS (to taste)

  • 1-2 Whole Chickens
  • Lite mayonnaise
  • Golden raisins
  • White or red seedless grapes, halved or quartered
  • Golden Delicious apples, chopped
  • Toasted pecans
  • Celery, chopped
  • Green onions, chopped
  • Curry powder (1 Tbsp/chicken is recommended)
  • Bread, greens or crackers for serving
  • Toasted pecans

DIRECTIONS

  1. Cook PBC Signature Chicken according to instructions.
  2. Debone the chicken with a fork. Include or remove the skin as desired.
  3. In a mixing bowl, combine in all the ingredients to taste, leaving the curry until last.
  4. Add approximately 1 Tbsp or curry powder per chicken. Taste the mixture and add more if desired.
  5. Serve on a sandwich, salad, or crackers and enjoy!
